Mozambique is totally the 'next' big destination with great beaches, Afro-Portuguese culture, plantations, diving/snorkelling, etc. I have some friends who have been based there and love it. I also work with someone who has bought a home there. I am trying to organise a work conference there (it has to be in Africa) just because I've heard so much about it recently.

http://www.moztour.com/ has a lot of helpful information about travelling to Mozambique (various travel requirements, etc.) and details on hotels and resorts throughout the country.

Tofo Beach is a must-see. It is up the coast by bus about 8 hours from Maputo, near Inhambane. You can hang out there on pristine white sand beaches in a little hut, and there is no one around for miles. The water is warm like a nice bath.
When you are in Maputo, you should go to the Polana Hotel, even if you aren't staying there. Go and have tea, and revel in the colonial splendour of the place.
Also in Maputo is the Central Train Station, which was designed by Eiffel, the guy who designed the Eiffel Tower, it was recently restored and is quite nice.
