Nightlife was possibly the best one in my opinion. The game has more options for the sims than you could shake a stick at. With this Expansion pack, Sims can go on dates, drive and own cars, includes 1 new aspiration: Pleasure, the turn ons and turn offs, and several new objects.
This expansion pack is seriously worth checking out.

Seasons. Next favorite is Pets.
Both of these added to the basic game play - nice visuals in Seasons, different type of family members in Pets. I have all of the expansions, but don't get into the "let's go to other places" gameplay like going downtown, going shopping, etc. So University, Nightlife and Open for Business didn't do so much for me. I like things around the house. Seasons and Pets add tons there.
