Life in Egypt is fun!
Egyptians are generally one of the friendliest Arab speaking people.
but before you enroll at a course of study, go there first as a tourist for couple of weeks and check for yourself,
you don't want to pay the fees for a course and find yourself trapped for year(s) somewhere you don't like!

Another suggestion,
why don't you seriously consider studying in Lebanon:
Please check the websites of the
- American University of Beirut http://www.aub.edu.lb
- Lebanese American University http://www.lau.edu.lb (They offer summer camps for Americans and other foreigners to learn Arabic)
- Notre Dame University http://www.ndu.edu.lb
All these universities have English as the language of instruction and offer the possibility to learn Arabic for foreigners.

The following universities teach in French:
- Holy Spirit University of Kalisk (USEK) http://www.usek.edu.lb
- Saint Joseph University
http://www.usj.edu.lb

And if you have free time, check http://www.rediscoverlebanon.com it offers some very short videos about life in Lebanon.

Cheers!
