Don't you think that 1 knight easily killing a dragon is very ironic with what the knights themselves describe the dragon as?

1.) Yes-very.
2.) Oddly enough, I see it as a sort of metaphor where the knight represents "the wishes and whims of the King"(oppressive government) and the dragon represents the wrath and fury of a collectively oppressed people wearing all the armor and splendor of such a beautiful and noble "beast" who represents, in turn, a kind of strange, but much needed, overthrow and alternative to the king's brutal nature.I think this because in most of the literature I've read about the legend, the dragon always attacks the king's castle-first; the central symbol of his authority. The knight who goes out to do battle with the dragon is a deception; a contradiction in terms. Most people think of the "knight in shining armor", but here in this conflict with the dragon the knight is actually the beast who ultimately slays the dragon (the people's rebellion) because "you can't fight city (castle) hall", much less its corrupt police (the knight). Always remember- never question or second-guess the usurped "authority" of the king's henchmen- the boys in blue(knights), or the oppressor-the king. The corrupt circle always completes its vicious cycle in the minds of the down-trodden. It's all symbolic-not merely special effects or useless folklore.
