How can I tell a white-collar corporate job vs. a strict break your back shift job?

I'll be graduating this December so I'm job hunting and doing career fairs, etc..my problem is I cant always decipher the crappy jobs that will lead nowhere vs. the ones where your mind and creativity are valued above your labor.
Any advice?

Anything medical, dental, legal, or technical = good idea.
Sales, insurance, customer relations, clearical = bad idea.
