One thing for sure is keep the opponent guessing until you find something that works. Some suggestions are running a Cover 2, Cover 3 (a cover 2 with 3 deep zones), or blitzing till no tomorrow. I am highly doubting man coverage would help your situation.

Run a zone style defense, with blitzes. Cover 2, both safties drop back in zone, cornerbacks 2 in a deep zone 2 playing up closer (you can occasionally blitz them), and then have your outside linebackers blitz him all day. Put the pressure on him to get the pass off in a hurry. Use your linebackers to keep him from running to the outside, and have your MLB stay in the middle in a QB protect, so if he trys to run up the middle, you can smack him. Pick a team that has a great front 4. Use your D linemen to put the pressure on him, and have your linebackers just clean it up.

Use basic 4-3 formation and select LB Contain. This will give you many options depending on who he likes to throw to. The play will be your two DE's will move into the flats and also "contain the QB while your two DT's will rush up the middle. Both of your OLB's will rush as well giving you four players rushing up the gut and with the Ends moving out it will spread the line allowing good penetration. Your CB and Safety's will play your basic COVER 4 and protect against deep passes. You should control the MLB and protect against in routes, out routes and TE passes over the middle.
I like to mix it up by blitzing all of my Lineman on downs ten yards or longer. On short yardage plays (5 yards or less) put all of your LB's in a short zone to cover the middle of the field and protect against the run. If he stacks one side of the field with his speed receivers then put your number one CB on man-coverage against his speed guy. You have to be proficient on calling your defensive man audibles.
By blitzing DL and LB it gives the QB no time to look at a second or third option. Keep him from burning you deep and you should stop drives before mid-field and also force a lot of FG's
This is hardest against INDY and NE because of Manning's and Brady's field of vision. He can hit any of three receivers at one time with accuracy but this defense really works well against running QB's because you force them out of the pocket and can run them down with your MLB. The Broncos are the best team to use this with because of the speed of the LB and CB. Put your fastest Lineman at the ENDS regardless of who your playing with

i dont have 07, but i could give you some advice through 05 experience. zone blitzes would be very effective against him. you need to get him to make mistakes or just to get a couple yard gains. if he's going to beat you, let him beat you by marching down the field. this way it gives you hope in creating mistakes on his part. either use your DE's or one of LB's in qb spy. you need to contain the qb. last but not least, dont make your plays obvious. change your formations once in a while. stack the line here and there to confuse him.

go with 3-4 defence and put a outside linebacker on spy 4 the qb,make sure you have your best cover guy on his best wr.you can also try ball control offence to keep him off the field.

Try the corner back blitz.But only if you know you can get to the QB fast enough for the sack.This is what i use when i play somewon like that

You have to try exotic defenses and hope react to his tendencies. Try to blitz and drop linemen back in coverage to mess with his linemen's blocking scheme's....try to hide your coverages(man, zone, blitzes)....and keep who is blitzing hiden. Move your safeties around and don't be afraid to move them up even when you are playing a cover two...the key is to make him hesitate a little. If you confuse him enough you can force him into mistakes.
