Im going to apply at chuck e cheese and i have a mohawk, i was wondering if they would care about my hair and tell me to cut it off...cause i would like to keep my hair

They will probably ask you to wear a hat. There are no specific guidelines mentioned in their employment policy regarding haircuts, and appearance.

Maybe you'll get lucky and get to be Chuck E. Cheese, in the costume! No one would see you. Otherwise, maybe they will ask you to wear a hat. Don't they have hats?
