Is it true that all Amsterdam restaurant and shop market are close early around 5/6pm?

Most grocery stores are open until 8pm monday through saturday, most specialty stores indeed close early, at 6pm on weekdays and 5pm on sat. There is one evening a week, 'koopavond' ('shopping evening' :)) that most stores stay open until 9pm, which evening varies from town to town, usually thursday or friday. Amsterdam's is thursday. Fortunately restaurants don't close that early, you can eat out all evening!

More and more stores are open on Sundays, but still this isn't a regular thing, many people don't like it either for religious reasons or because small business owners can't keep up with the big stores with more employees that way. And in the big cities you'll find 'avondwinkels' (evening shops) that are open late at night, not sure what time they close, there's none near where I live... there are only a few and smaller towns don't have them at all.

Generally take care of your shopping in the daytime... I had a hard time getting used to this again after living in the US for some time, I loved to shop in the middle of the night... lots of room in the parking lot, no mothers with whole herds of kids blocking the alleys, no lines at the checkout...

not true, specially not in amsterdam, on sunday they might close a bit early , but for the rest they be open most of the time and specially when now the tourists are comming again.
regular stores will close at around 6 pm, but the restaurants be open some till 11 or 12 pm on thursday night there is late night and all regular stores are open till 9 pm

No, not anymore. Restaurants were always open until late. The supermarkets, like the Albert Heijn, are open until 10 pm. In the city center there also open on Sundays. The kitchens of most restaurants close at 11 but the restaurant it self closes at 01.00.

The big shopping centers close at 8/9 pm.
Albert Heijn closes at 8 pm

I agree with the first answer. You might find that places close early on sundays (around 5pm). Thursday nights are "koop avond" so shops are usually open til late.

no, there are even supermarkets that close at 22.00. On Saturday a lot of shops close around 17.00. Most restaurants are open till late.
