Imagine the typewriter printer that spits out credit cards: if you have to spell the cardholder's name in both upper- and lower-case letters, then you'd need 52 letters on the typewheel, one for each letter and its corresponding size. But if you spell in either all caps or all lower-case, then you'd only need 26 letters.
So it's more efficient and cost-effective (not just in materials but also programming the machine), saving credit card companies several million dollars a year.
Also, studies have shown that people get angry when they have to read in both upper- and lower-case. Last summer, one person was killed in Chicago as a result (thank God not related to credit cards!). So the credit card industry wants to avoid a repeat of their loss in the landmark 1984 lawsuit Rudy Weinermeister v. Chase Manhattan.
Finally, research has shown that reading your name in all caps empowers, emboldens you. And a confident shopper is a buying shopper. This is why credit card companies can command such high percentage points on the merchant's sale; the store knows that it's benefitting from the extra money shoppers are spending as a result of reading their name in all caps. it's the best format for all the processes the card will go through.. being put into machines.. machines like caps.. not so much detail to go through.. caps are less to be confused with other designs and shapes when it comes to a computer reading them.
the card's embossed capital letters are easier also when it comes to pressing carbon paper when a cashier or other when they want to make a copy of the card for processing.
also capital letters (pressed in plastic) take more punishment.
and is easier on our eyes.
and it's aesthetically more pleasing.

For the same reason the US Post Office wants you to print addresses in all capital letters: they are easier for machines to read.
