An egg was cracked and alkaline was added into it. The egg white solidified into a jelly-like substance. Can anyone please tell me why with specific details on what happens to the proteins and all? Thank you!

The egg-white is albumin. Albumin with alkali becomes albuminate. A substance produced by the action of an alkali upon albumin, and resembling casein in its properties; also, a compound formed by the union of albumin with another substance.
