I'd do the I-55 to I-10 from Memphis to the Houston area. On I-55, after leaving Memphis, the only time you'll slow down is going through Jackson, MS and usually not by much. I-10 is wide open now through all of Mississippi at least.

I-55, to I-40, to I-30, to Texarkana, then take 59 to Houston. There used to be a really good BBQ joint on 59 just before you get to Houston. It's on the left side and really easy to miss if you don't know what your lookin' for. Anyway, that's the most direct route.
