You might look at starting an herb garden. Mint is nice but you have to put it in a container to keep it from taking over everything. Bee balm is a strong kind of smelling plant. Great for humming birds. You can do basil and a lot of other herbs. They are really easy care and useful and the same time.

Try native plants for your area. Check your local Native Plant Society. They may even be able to give you some starters!!

Yuccas do pretty well everywhere.. if it can survive the high desert it can pretty much survive anywhere.. (watch the wipple yuccas though.. they are sharp.. like getting stabbed with a bayonet.. and yes i'd know)

I would opt for succulents. If you have a variety of them in pots they make a pretty show. Also, Lavender does quite well in a pot and you can trim/shape them to your desire.
