i think it's called submisssion. They do some kind of move on the other guy like choking em and the other guy gives in by doing a tapping motion. ...something like that.

When you're kicking the other guys ***...and he 'taps'(more like hits) the floor with his hand...it means he gives....or is saying 'uncle' or whatever you want to call it....and you win !!
