I found my family originated in Southern France. I found that some people there have Italian roots. This made me think even more when I saw my relatives who were from that area. They had tan skin, dark hair, and very dark hair. Does that mean I could be part Italian too?

Italy and France aren't very far apart geographically speaking. A lot of Italians emigrated to France, so yes a lot of French have Italian blood in them. I work in a hotel in Italy, and have noticed that a lot of the French clients that come either have Italian or Spanish surnames.

Not sure about that but the Turks are definatley Greeks....or vice versa!

It's certainly possible. One of the best lessons from genealogy is how much everybody is related to everybody else.
