Let's say, you've got ur head up in the clouds and suddenly out of no where, someone comes and taps u on the shoulder. Obviously, u'll kinda like..jump up a little bcoz u were shocked/startled. So...what's the word for that?....it can't be shrugged coz u don't shrug when ur suprise

Shudder? Flinch? There isn't really a word for that action in that specific context, but I would use "flinch".
