Hi... this was the first page that came up from doing a yahoo search for "model volcano"....

http://volcano.und.nodak.edu/vwdocs/volc_models/explosive.html

I'm not sure if that's exactly what you wanted, but it's a fairly good model of an explosive eruption building a volcano.

If you don't like that website just do a yahoo search for "model volcano" and you'll get plenty more sites.

Good luck.

edit:
I was just reminded of something... You could build the classic volcano model that would use baking soda+vinegar... but instead of those ingredients you could use Coke and Mentos. This will create pretty much the same sort effect, and it would not use any baking soda.

Just build a clay or paper mache volcano around a coke bottle, leaving an opening to drop the mentos in through... then drop the mentos in and you'll have yourself a neat little volcano model.
