Potholes are the spots where the road's surface has eroded away ... they are all sorts of shapes.
Manholes are round and have covers. They are round because that is the shape of the pipes that they are used to cover. The pipes are round so there is no seam for pressure to build up against and break the pipe - although some will burst at the joints or if there is a weak spot.

Pothole or Manhole covers are round because it's the only shape that will not fall through itself at any angle. So the lid will not fall down the hole no matter on what angle it hits it.

They are round because a round cover will not fall into the hole it is covering. So when the maintenance crew pulls it open to service the subterranean section, the manhole will not accidentally slip out of the hands of the crew and go crashing down the hole. If you will notice...most if not all of the square ones have a hinge on them. This keeps the heavy lugs from falling in on the crew.

Because if they were square then the covers would fall in at certain angles. When they are round this doesnt happen.

with any other shape it would be possible for the cover to fall through the opening if it was dropped at an angle or turned the wrong way. A circle can't.
