You're right, on the soundtrack info, it says that the performer was "Tim Herlihy" - but that's because he played the kangaroo in the actual movie, not because he's the writer of the song.

The actual writer of the song is credited to be Allen Covert (from IMDB... check out the 2nd link).

However, seeing as how this is an Adam Sandler movie, and Adam Sandler does write a lot of kooky songs, I think that the lyrics for the version of "The Kangaroo Song" attributed to him are the right ones. I'm pasting it here, but you can also see it at the 3rd link below.
