in that case, the u in unique is pronounced "you". 'an' is only used when the first sound SOUNDS LIKE a vowel.

I am NOT good at grammar at all, but a unique oppurtunity sounds better than an unique and I think it is because of the constanant sound in unique. It doesn't sound like it starts with a vowel...do you know what I mean? ...but this comes from the person who thought/still kinda thinks usefulest is a word. SO, I think maybe you should get a more qualified opinion than me.

The new generation of American kids isn't being taught grammar as a course. The school system expects the kids to pick it up themselves just by reading textbooks and listening in class. Can you tell it was a bad idea to take grammar lessons out of the classroom?

The correct form is "an unique..." It only sounds funny because the word unique actually sounds like "yunique" which would be a consonant sound rather than a vowel sound.
