NOBODY can believe I take on the responsibilty I do at my age everyone says I am the perfect example of what a wife and mother should be.

I think he is just worried about them judging you based on your age ... I think he is right not to want to tell

Ask him... This might be a good opportunity in a quiet and honest mood to explore each others values. If he can be open about why, you've got a good guy there. It may be something in his background that puts a stigma on younger women... Something a parent or experience has drilled into him.. Maybe talking about it will soften his resolve. And I wonder, why is it that you find it important for his family to know your age? Age is only a number.. Be the mystery woman. Be confident that he likes you, and that's all that matters. If someone asks and you decide not to tell you can very sweetly say, "Well, I'm old enough to have --- and cite a few of your accomplishments...(things you feel show your sense of responsibility) " Your boyfriend could say the same if he chose..

Sounds to me like you might be trying to convince his family that you are "old enough" to be his wife and a mother to his children? Or your own children... Deeds are better than words.. Show that you are 'old enough'.. Do deeds, kindnesses, pleasantries that show your maturity. Standing there stomping your foot, pouting, and hissing, "I'm all grown up. I'm 20! " Isn't one of them. And.... Don't worry about what "everyone says" -- be your own woman convinced in your own right that you are doing the best you can with what you have towards being a responsible, mature adult.
