Not all fish is previously frozen. There are stores and Restaurants that have fish flown in daily or a few times per week from the coast.

You can have fresh fish and seafood delivered to your door step if you wish.

Fish can be sold as FRESH even if it has been frozen and thawed since it was flash frozen while fresh.

Unlike chicken, fish bones do not change color after being frozen.

If Fish is sold as FRESH it must be.It may have been chilled, but not frozen.
If Fish has been frozen it is normally marked as " I Have Been Frozen"
Don't know how it would be if you are 100's of miles from the coast.

Yes, they have to freeze the fish to transport it in trucks, as soon as they leave the boat, they're frozen, even if they will be sold a few hours later on a local market..
