I heard it was as simple as a high school diploma and little experience. I'm not talking about 4 star fine dining restaurants now, but like Appleby's.

I own a restaurant. I look for people who see what needs to be done and does it. I hate to have to ask them to do anything. They should be on top of everything. Hence "manager". They need good leadership, problem solving and social abilities....

Depends on the company, but most retail & fast food places you just have to work your way up the ladder. If you've got what it takes you can climb that ladder pretty fast, but be warned, retail & fast food management doesn't add up to much more pay at most places. Beware of SALARY status in those corporate owned chain places because they will just use it as a way to get more hours out of you without having to pay you more. It's really awful, and there aren't many good companies that actually treat their employees right anymore these days. Gotta love corporate America!

My advice is don't manage for a big corporation unless you know other people who manage there that can vouch for the quality of life there. You're better off getting a degree, doesn't matter what kind, and doing anything BUT retail/food/hospitality. It drains you until you don't feel like a person anymore. Store management level is probably the worst place to be in a company.

Don't be a manager of a restaurant, serve or bartend instead. You will make a lot more money and you won't have to work the ridiculous hours they do. Trust me.
