My resume has 5 jobs from 2002-2007...that's almost one job per year. These were service/retail jobs. I am getting ready to apply for a mortgage sales job which I seem to qualify for, and I want them to know that if they extend a position to me, I would be in it for the long run. Should I leave off one or two of my previous jobs so they don't get the impression that I will just leave after one year?

Do NOT lie on a job application. If found out before you are hired, you won't be hired because you can't be trusted to tell the truth. If found out AFter you have the job, many organizations will still fire you for not submitting accurate information.

Leave the jobs on but be prepared to explain why you left each position. If you can provide a legit explanation, the number of positions won't be an issue. People change jobs with greater frequency today then they did 10 or 20 years ago. Since it's a sales position, the hiring manager will be more concerned about your ability and aptitude to sell. You may want to examine other sales positions as well, because this is a very tough market to enter as a new loan officer. Best of luck!

Yes. Take off a few so that you don't look like you have trouble staying in the same job for over a year and my advice would be to remove the jobs that don't really have anything in common with what you're applying for (i.e. if you worked in food service as opposed to an office job).

Keep all of the jobs on your resume, but in your cover letter and goal section, put that you are looking for a long term position.

For one thing, you would need to explain the gaps in your work history. Also, most people tend to change jobs more often now, it isn't the kiss of death it once was.
