I believe this is the full list of Irish (100% or otherwise) footballers with UEFA Champions League medal:
Steve Finnan (Liverpool - 2005)
Denis Irwin (Manchester United - 1999)
Roy Keane (Manchester United - 1999)*
Mark Lawrenson (Liverpool - 1984)**
Ronnie Whelan (Liverpool - 1984)
Michael Robinson (Liverpool - 1984)***
Steve Heighway (Liverpool - 1977, 1978)
Shay Brennan (Manchester United - 1968)**
Tony Dunne (Manchester United - 1968)
* Roy Keane was suspended for the final but still won a winners medal.
** Shay Brennan and Mark Lawrenson are not 100% Irish I believe, some others may be but I am not too sure on the others.
*** Michael Robinson was an unused substitute in the final, which I believe still warrants a winners medal.
And if you're interested, if I remember correctly only two Northern Irishmen have won a European Cup winner's medal:
Martin O'Neill (Nottingham Forest - 1980)
George Best (Manchester United - 1968)

I think just Roy Keane, Steve Finnan, Dennis Irwin and perhaps some of the Celtic squad that won the European Cup in the Sixties.
Possibly some others that I don't no of from Liverpool or Forest.
Does Martin O'Neal or George Best count?

Unatco7 seems to have too much time on his hands but is probably about right? I must take issue with the omission of George Best though; he was in the same side as Tony Dunne and Shay Brennan and was Irish to the core. Utd wouldn't have got to the final never mind win it without GB.

No one, if you go back far enough, no one is 100% any nationality.
