The best resort is going to be different for each situation and party, what you are looking for, it also depends on what you are wanting to spend, etc.
The value resorts are the least expensive, but also are more popular for young kids and groups. The resort can be noisy and the rooms are a little small. However, the big icons at each of the values (All Star Sports, Music, and Movies and Pop Century) are always a huge hit with young children. Generally, children like the values more than the more expensive resorts just because of these icons, which is why it can be noisy. If you don't plan to spend much time in the room, then the value should be fine for you, it is a clean room, with everything you need, a nice pool and an inexpensive place to eat.
For a larger room, and a resort that is a little more quiet, I would go for a moderate. You get the extra space, a few extra little things and there are usually fewer kids. French Quarter is usually a big hit with children as well because of the great pool, but is not nearly as loud as the values, moderates tend to be more popular for adult couples not wanting to spend quite as much as the deluxe resorts cost, but wanting something a little nicer than a value.
The deluxes are more expensive, but offer more benefits right at the resorts, such as more dining options, and better transportation (except for Animal Kingdom) The best part about the deluxe resorts is that they have more onsite, so you don't have to go outside of your resort as often and they also offer more transportation options, so you can usually get where you are going a little quicker. Each of the deluxe resorts offers a benefit, Wilderness and Animal Kingdom are the least expensive, Boardwalk and Yacht and Beach Club have boat transportation and you can walk to EPCOT. Then Polynesian, Contemporary and Grand Floridian are the most expensive but have the monorail. Of course, these are just a few of the benefits.
You also have your villas and then the Wilderness Cabins. This is if you are wanting more space and/or a kitchen. Also, the All Star Music resort now offers a family suite with a small kitchenette if you are needing a fridge or anything like that, you can request medical fridges or pay to have a fridge in regular rooms as well.
All the Disney resorts are great and they each have their own benefits, it just depends on which offers the most to you and which is in your price range.
Pop Century resort is newer and the bus transportation is a little better, it also seems to be more popular for adults, so tends to be a little more quiet. For a moderate, they are all great, I think it kind of depends on what you like best. Coronado is more like a deluxe resort (just not as many of the extras onsite) Caribbean Beach has great themeing, is a huge resort, etc. Port Orleans is a little smaller property and also offers the boat transportation. Deluxe, they are all great, I kind of prefer Wilderness over Animal Kingdom, because of the location. I like Boarwalk and Yacht and Beach Club pretty much equally. I personally like Polynesian and Grand Floridian the best of the monorail hotels. All the Villas are really great. I spend a lot of time at Downtown Disney, so I like being at Saratoga because of how close it is. I don't think you can really go wrong with any of the deluxe resorts, but there are some better ways to go. For example, in my opinion, if you want to stay at Animal Kingdom, I would definitely go with the savannah room, since that is the biggest thing at Animal Kingdom, otherwise I would stay at Wilderness because of the boats.

Wish you stated your budget. If you can afford it I would agree with the Grand Floridian, but there are many good choices. I personally idore staying at the Caribbean Beach, paying a little less and spending that in the parks. There is a huge lake in the middle and to me has more of a quiet resort feel than many other Disney properties. (Just be sure to get a garden or lagoon view not parking lot). It's so pretty to walk over to the food court in the am or even better at night, when it's so quiet. Think how nice it would be to leave the parks and take a moonlit walk around the quiet lake! And each country has it's own beach and hammocks. These are usually very quiet. I often started the day with coffee in a hammock, and it's a lovely way to wind down quietly too. The rooms are larger than the other moderates as it was originally a deluxe property. And if you stay there know the countries near the food court tend to be filled with kids and a different experience. Since I don't want to walk miles I stay at Aruba, as it's an easy walk right across the lagoon to the food court, but far enough away to be quiet. And it may sound silly but I like the color scheme there better than the others, fromt the pink/blue outside to the prettier inside decor IMHO. So that would be my suggestion beyond the Grand Floridian. I find most of the other deluxe resorts to be overpriced, over crowded, and over rated to be honest. And one trip we had to spend a night at a value resort and I would definately not stay in one again. The rooms were ok but small, but in addition to being noisy and overrun with kids, it was a massive walk to the bus and lacked all the amenities I enjoy at Disney.
As with all Disney Resorts I would read the boards, learn the pro's and con's not only with different hotels, but with different areas in the resort. And definately call previous to your trip and request that specific area. Folks say this can't be done, but I have done it and nearly always got my request met (or upgraded!). Generally a good time to call is within a week of your trip.
I would look over all the resort pics at the boards, and see what folks are saying, and what sounds like something you & your husband would enjoy. I'll post my fav sites. Have a blast!

Just saw you asking for suggestions for stuff to do, and here is one. I would head over to the Contemporary one day (if you have a car they have valet parking, or you can take a bus or monorail from your resort) and I'd spend a few hours on the lake. It is SUCH fun. They rent a large variety of things from good sized boats to jet ski like things. For Disney the pricing isn't too bad, and not only is the water fun, but you get a great view of the Magic Kingdom, the wedding chapel and various resorts. Also if you stay at the Carribean Beach you can rent paddle boats or other boats and play there too (various resorts have this, but I find the Contemporary boats the best location etc. Don't care for that resort at all though).
And my last recommendation is The Brown Derby at MGM. I think they have some of the best food in the park. And we were there for my friends birthday and they did a lovely and free small cake presentation. The Cobb Salad is out of this world and true to the original recipe. That and the Major Domo's pie at Cinderella's castle are my 2 dining "must do's" for any Disney vacation. And I'd be sure to mention your husband's birthday pretty much everywhere you go all day--Disney is great at little surprises/presents!

I live in Key (FL) and I go to Orlando often. I am young as well, but I have stayed at most of the hotels. I prefer the experience, and if you are from out of town.. you probably want to get the FULL disney experience as well. The Floridan is a great hotel, and very very good. But it is expensive. I personally liked the Animal Kingdom Lodge, if you get the suite, you can have the animals RIGHT AT YOUR PATIO! It is not as luxorious as the Floridian, but it makes you feel like you are still at Disney. I'd rather have the experience.. because why spend so much money.. the point of a vacation is to stay out of the hotel. Might I recommond going to "Wonder Works" on International Dr one day, it is very fun and about 20 dollars (you can't miss it, it is the upside down building!!) So much to do.

You might really enjoy the Boardwalk in the Epcot area. There is so much to do there and you are a short walk away from the entrance to the international area. The guest villas are very nice and offer more privacy.

From personal experience, do not wast your money on an expensive resort if you plan to be busy all the time. When my mom and sisters came down to visit, my mom learned that the only time they spent in the room was when they were asleep. All of the resorts are awesome. My college friends stayed at a value resort and it was just as nice as an expensive one. Disney makes everything amazing.

I recommend Portofino Bay. They have great restaurants and buffets. There's a little boat that comes every half hour to take you over to Universal Studios. You can also just drive to Disney world, it's not that far. The scenery is really nice. It's suppose to be like you're in Italy.It's so beautiful i love it.

hi! i might surely stay at Disney's Port Orleans Riverside! that is one in each of their average motels so that is not too costly yet relatively remarkable! The rooms are relatively soft and remarkable! they have approximately 5 remarkable swimming pools, a extensive eating corridor the place you could eat breakfast, lunch and dinner! they easily have a restaurantt, a bar, a foyer and a remarkable present save! I easily have stayed at this hotel approximately 5 cases and that i've got under no circumstances been disillusioned! Disney isn't a low priced holiday, so why spend plenty funds on an costly hotel while your spending maximum of a few time at between the parks? I surely propose this hotel! I purely have been given back from Disney and that i already miss it!

You have got to stay at the Grand Floridian.
It has an indoor and outdoor pool, jacuzzis in certain rooms, room service, balcony, spa services to come and visit your room, it is pricey but worth every penny.
