Vocals are a C-music instrument but they can be written in any key.

vocal music can come in any key. Unlike some wind and brass instruments that transpose because of the way they are built, a human voice has that flexibility built in. Perhaps what is confusing is the use of the G clef, which is what most women and tenors read from, or the F or bass clef, which is what the lower men's voices use in classical notation.
since the percentage of perfect pitch in Westerners is so low, it's easy for singers to start just about anywhere and not get confused. Perfect pitch people know exactly what frequency they are on, and any deviation from that makes them twitchy, to say the least.
By the way, depending on what voice it is ( soprano, tenor, etc.) C major is not the easiest key to sing in. For some it's too high, for some it's too low. it's just the one without flats or sharps in it, so it's easiest for those who don't read music so well :D

It is usually written to suit the singer, but the majority will never go beyond 5 octaves, if written by a professional composer, as this is the limit of an excellent opera singer.

The easiest key to sing in for most people is C.
