I posed the statement: Parents aren't as much a part of their kids' lives as before. In the sentence, I was indicating that I was talking about more than one child, and one life. Was my placement of the apostrophe right?

Yes; kid's would indicate possessive of one kid; kids' indicates the possessive of more than one kid.

Yes you are right, but one extra piece of advice. If this is for a formal essay use "are not" instead of "aren't".
