I know that giant squids are very rare, but why would scientists be so excited over a 30 foot one, as opposed to a 25 foot one?

They are almost impossible to find in the deep ocean, so it is rare for scientists to get a chance to see one up close.

I would assume that "bigness" means easier to examine, since all of the details of the various organs are easier to see with the naked eye.

No - bigness means that you have special challenges to finding food, shelter, and territory, as well as behavior. They've been around for so long that they are genetically distinct from other squids, and behaviorally distinct, and environmentally distinct.
