it depends on the site, some sites will add a header (an extra line of text used by mailservers) , but it's entirely optional.
The X-IP tag (also named X-Originating-IP) is probably the most important one and it should give precise information about the sender (from where the email was actually sent). Unfortunately, this tag is optional for email protocols, so some spam messages will not include it.

also in many cases if you send an email to abuse@websitethatsentit they will block your address from recieving or shutdown the account of the one who sent it.

Be careful though if the person feels threatened then they can report to their mobil provider and they can track down the exact IP address by contacting the website it was sent from because the website records the IP address for their own security.

I only use skype for text messages over the internet and the answer for that service is no. The receiver will only see your skype user name or, if you have registered it, your mobile number.
If the person receiving the text hits reply they will not be able to send to your skype account although they can send to your mobile.

You probably can't. The website probably logs it, but unless you are law enforcement they aren't going to give it to you.
