For me, it would be Travis Willingham (i.e. Roy Mustang from FMA). I'm such a nerd, I freakin' rented The Guardian because he was in it!

Travis Willingham would definitely be awesome to meet!
I would also maybe like to meet Vic Mignogna (Edward Elric), and maybe Kevin Corn (Daiske Niwa of DNAngel). I would like to meet Kevin Corn just so I can finally see what he looks like! There are like no images of him available - he's a mystery, haha.

Wow I'd love to either meet Crispen Freeman ( Zelgadis from Slayers, Hediki from Chobits and Tylor from Irresponsible Captain Tylor.. and wayy to many other anime to count...) , and Lisa Ortis ( Lina from Slayers, and Deedlit from Lodos Wars.) I hope I spelled all those names right...
Personally I've met tons of voice actors from going to conventions.. Otakon usually invites great voice actors. Their are bound to be more of them coming but here's whose going to be there so far.. ( points to link below.)

I would choose the voice of Inuyasha (Roy Cox). I mostly love the character Koga though.
