It's related to bacteria. Before his experiments people thought that the bacteria, maggots and other nasty critters that appear on food left out just appeared out of nowhere. He proved that they were airbourne and planted themselves on the food, then grew and multiplied there.

I believe one of the experiments involved leaving two pieces of meat sitting out. One was covered with a glass dome, and the other was left uncovered in the open air. The uncovered piece developed maggots, and the covered one didnt.
