Hm. Well I won't make some giant list but since you don't want any ancient japan types I would say try Cowboy Bebop and/or Full Metal Panic. Pretty good ones I say.

i could think of initial D. its bout car racing but i think this one is pretty cool especially with its car CG. the series includes racing between AE86, Rx7 FC, Rx7 FD, and GTR 32.
