What kind of bakery? Cakes and the like, or more of a panderia, or breads and rolls? The reason I ask is that one works better in one area, as opposed to another.
If you make upscale cakes, go for an upscale area like West U or Memorial.
If you are making artisan breads and the like, either the Rice Villages area, the Villages areas on Katy Freeway, or one of the uber masterplan community areas like First Colony.
Panderias are popular in hispanic neighborhoods and have some minor success in trendier areas.

When you say bakery in the Galleria or downtown area, that means a full scale bakery. The Galleria area has more than 5 good ones now. If you can stand the competition, then go for it. Right downtown would be good so that businesses in the areas could order baked goods and specialty cakes. If you offer delivery for large corporate orders, it would be a plus. Don't forget the lunch time paninni sandwiches, po boys, signature soups,and calzones to round out your service. And if you offer and advertise a 50% sale off anything baked that day that remains at 4:00-6:00 PM it gets rid of any overage. La Madeleine does this and attracts the home bound crowd and gets people used to stopping in for their loaves of bread.

I live in San Antonio and don't know Houston at all but when I lived in Charlottesville, Virginia - someone put a bakery across the street fro the hospital and it was always paced. from 6 am until closing, but especially in the morning.

Can you find one near a church? A lot of people stop and get bakery goods after or before church on Sundays.

yes, the cleak lake area could really use a bakery- everthing around here is a franchise and not soo good.

I think it does depend on what type things you will be baking...but the first thought to mind was around the memorial park area.
