Fire. It allowed people to be productive after dark - they were no longer tied so closely to the day/night cycle. It also allowed them to experiment with heating things up, which led to cooking, metalurgy, and all sorts of other stuff. It was truly the first great leap from being cavemen to being the thinking, rational, scientific beings we are today.
