I've been baking since I was 6 years old and have a small side unofficial business where I sell my cakes and desserts to friends and coworkers. My next step is to open up a shop to sell my cakes/desserts. But do I have to have the Pastry Chef diploma?

No, you don't. But you probably will be limiting what you can do if you don't have one.

if you are just going to open a bakery shop then i guess No
but if you are going to be one of the chef then

No, you don't. In fact you have the advantage of marketing your stuff already so you know what sells.
