Do a card yourself - I'm sure you did that in grade school. And enclose a gift certificate for her to give to you for some spelling lessons.

Are you a photo geek?
How about a collage of photos inside the card of special things you have done together over the span of time that you are celebrating? (ie the last year or month or whatever anniversary it is that you are celebrating)
You could say why each pic or event was special to you, etc.
