Short term - learn to sleep on your stomach.

Long term - lose weight if you need to, or look into throat surgery.

There are sugeries that can be performed depending on the problem. Some of them are really not adviseable and very chancy. Your best bet is to buy him or her some nice music for relaxation and a set of earphones. Maybe some industrial ear plugs.
You might have sleep apnea in which case you could attend a sleep study clinic and receive a diagnosis. A CPAP machine (continuous positive airway pressure) will solve the snoring problem and help both of you sleep better. It would also add years to your life if you do in fact have sleep apnea. Studies have shown that the decrease in oxygenation during apnea creates several problems. Get it checked out.
The machines of today are extremely quiet. People who use them are amazed at how good they feel.
