How long can a washer and dryer sit without being used before the gaskets dry out?

I had mine in air-conditioned storage for 2 years and they came out and worked fine. I am not sure it would have been the same without climate control...

That depends on where you have them stored at. Have a service technician check them out before you use them. Also it wouldn't hurt to spray the gaskets with a lubricant.
