Well there are always risks of course-
When it's soft it's easier to hold and play with, but sometimes it can leave a residue on your hands.
When it's hard it definitely holds its position a lot better, but sometimes it's harder to squeeze it in to things.
It's a personal choice, but I would say mix a little new with the old.
Very tricky... :)

I find it gets hard after I have been playing with it for a while.
And to my amazement, it stays hard.
Problem is its a hassle to clean the carpet afterwards.

There is some kinds out now that all you have to do is add a sprinkle of water and it comes back to life! soft-like.
