Sure... theoretically you could build a house out of anything, depending on the size you want and depending on whether you'd need an armature, etc.
I don't know if you meant the actual product "Play Doh" or another "air-dry" clay (purchased or made**), but for either you could just make the unit freestanding, then let it dry or you could make parts of it and let those dry before using them (perhaps thin things like roofs or windows, or even whole walls etc --which you could glue together rather than just sticking together).
If you wanted to make something fairly large, you might want to use an armature of some kind (either covering a whole box or bunch of connected boxes or something else with clay, perhaps with windows cut out --or make the freestanding pieces with chicken wire or something else sandwiched inside).
I suppose you could even make a much larger house from Play Doh but that would require a huge load of Play Doh, or you could use something else mud, etc., (adobe), plaster, etc.
If you do use PlayDoh or another air-dry type of clay, you'd need to seal it to make it more water-resistant if it were going to be exposed to much water or humidity later.
** like "salt-dough," or mixes of sand or sawdust with white glue, or hypertufa, etc.

Hell yeah! Just hope it doesn't rain. If worse came to worst you could eat it too. Like a really salty gingerbread house.
