If you have an underactive thyroid gland this means that the thyroid has slowed down or stopped its production of thyroid hormone. Meds are usually for life, so if one does not take them all the symptoms will return. People take them because they need to. If they don't, they will have so many symptoms it would make life miserable. Why would anyone want to stop. It's really no big deal to take 1 pill every day. I would never go without my thyroid pills, especially after all the relief they have given me from symptoms.

Thyroid pills are usually thyroid hormones. I had thyroid cancer so I do not produce any thyroid hormones, without the medication I would be dead in about 2 months.
For other people their thyroid is not producing enough hormones (hypothyroidism), and they take thyroid pills as hormone replacement for their own thyroid. Typically this will lower the amount that the thyroid produces and will create a greater dependency to the hormones taken orally. Once you decide to take thyroid medication, it is for life.
There are also pills for people who thyroids produce too much hormones, I am not familiar with these drugs.
Hypothyroidism has many causes and for some the cause is unknown or no cure. That is why thyroid hormone replacement is the treatment prescribed to most.

People have a blood test to check their thyroid function if the doctor suspects they're hypothyroid. They're exhausted, have thinning hair, dry skin, etc. due to lack of thyroxine, a hormone made by the thyroid. The doctor orders thyroid pills, artificial thyroxine, in order to make their thyroid level normal. They'll probably have to take them for the rest of their life, but that's because their thyroid isn't working. With the thyroid pills they'll be normal but if they go off of them they'll go back to being low on thyroxine.
Your question is kind of like asking why people should take insulin if going off of it will give them high blood sugar. Sure they'll have high blood sugar if they go off... they'll also have it if they don't take it.
I hope this helps.

You only need them because you have a problem to begin with. I have an overweight friend with a under active thyroid and it has helped speed up her metabolism to a normal level, another friend could not put weight on due to an overactive thyroid.

They don't get prescribed unless the person has those symptoms in the first place. Those symptoms are for hypothyroidism.
The opposite condition, hyperthyroidism, in its extreme form produced gout.
There are a number of hormones involved that can be measured, and there is of course a normal range.
