Mardi Gras is a celebration done before the beginning of Lent, 40 days before Easter. So it is at fixed dates around the year. in the Catholic calendar.
First there is Mardi Gras (called like that because it precedes the period of Lent and related fasting), then Ash Wednesday (cover your head with ashes, repent, go to church), then Lent up to Easter Sunday, during which one is not supposed to eat meat.
The celebration is also called Carnevale (or Carnaval), from Carne - meat - and Vale - is valid, can be used, as before Lent one can eat meat... These terms (Carnevale and mardi Gras) has been recuperated in many places to mean "party party party", but still happen on fixed periods in the year.

Smidgen late for this year. Fat Tuesday, Mardis Gras, Carnaval, Karnival. The Tuesday before Ash Wednesday. That is for those who really _NEED_ a reason to party.
Just flip up your shirt and ask for beads when you see me!
