when I was in 5th grade, I did one that tested mike chocolate vs dark chocolate melting point. just melt each kind and time it, then do some research on why that is. This was awhile back, but I got Third place!
Bonus: I got to eat the science project! good luck!

How does colour affect taste:
Make up sugar water mixtures - all the same

Add a flavouring (banana essence, mint, etc)

To half of them add the 'correct' colour (banana - yellow, mint - green, licorice - black, by mixing all colours of food colouring).

To half of them, add the 'wrong colour' (black for banana, yellow for mint, etc.)

Have subjects try each of the drinks, and guess which is which...

Keep track of each of them (use codes), and keep track of the answers.

Check out how accurately people identify the flavour in each colour variable.
