& guys on cattle stations are called jackaroos or cowboys?

Farmers are associated with farming - planting and harvesting of plants like corn, hay, soybeans, etc. In the past people who owned dairy cows usually grew the hay and straw that the cows would need and after harvest they would take the surplus and sell it to the local markets, thus making them farmers.
Ranch hands, jackaroos and cowboys work on ranches. No farming here, just riding the herds and fixing fences. They are just there to keep the cattle safe until they can be sold at market. Hope this helps.

Dairy farms are considered part of agriculture. The Farmers raise the cows and in turn the cows give milk. Which would be a product.
