What happens is that oil loses its viscosity. In other words, the oil loses its "thickness" to coat the metal parts efficiently. When that happens, these metal parts get worn and little metal filings eventually get introduced into the oil circulation system. These metal filings cause even greater wear to the parts that need to be lubricated. That means your cylinder walls will lose compression, and your transmission gears will ultimately break, costing a lot of money in repair jobs.
In short, the life of your engine depends on routine oil changes. It all comes down to how long you want your car to last.

You'd probably get away with it, but it might cause minor or serious trouble for the engine.
If you had to add a lot of oil it would actually work in your favor, because you'd be freshening the supply.
I'd be more worried about the fact that the filter didn't get changed.
If you are lazy about changing oil, seriously consider synthetic oil, which works a lot better in this sort of rough service.

The additives break down, the filter gets clogged and by passes, the oil gets filled with dirt, can't lubricate properly, and the parts wear prematurely. The motor will stop someday. The oil itself doesn't wear out, but when it is full of dirt, and worn metal, it just scrubs that on every surface in the engine.

As long as you keep putting in oil as needed it will run fine. Although you're gas mileage will suck due to carbon build up. It's when you don't change the oil and let it sit that can cause real problems.. But it is wise to change oil regularly.. I know they recommend every 3 months or 3000 mi which ever comes 1st.... I usually go about 6000mi since I only drive back and forth to work...

The engine would wear out prematurely. The filter would clog and stop working, but most filters will allow the oil to bypass at that point and let dirty oil circulate. This would cause the oil pump to possibly clog up and burn up the motor.

Your engine could stop working properly. I had to get a rebuilt engine about 7 years ago. It cost a lot. I finally had to get a new car this year.
