I didn't see the episode, but in general, a stand-in is hired to take the place of the actor for technical purposes. The actor will perform the scene, while a camera assistant marks the actor's places on the floor, with tape. Stand-ins then re-enact the scene, moving from place to place for the lighting, the cameras, the measuring of distances, etc., for the director to determine his/her camera shots, until the scene is actually ready to be filmed/taped.
On many shows, Little People are hired to stand-in for child actors who are permitted only a limited work schedule, based on their age, and will rehearse the scene for the child all day until it's ready to be shot.
Since stand-ins are generally hired based on their height and similar coloring (compared to the actors), they may also be used occasionally as body doubles.
