I've always wanted to go, but never made it over.
I've been looking at the website for the Island and see there are many activities available (as you would expect from a popular tourist destination).
Jeep tours, parasailing, scuba diving, ocean rafting, kayak adventures, golf, horseback riding and of course boating.
Though you may not want to sail after the trip across.
Hiking is a popular way to see some of Catalina, over 42,000 acres to wander.
There are well-marked trails for both hiking and cycling.
If you like the sleeping outdoors there are secluded campgrounds.
For dining you have a country club and other restaurants (seafood being the speciality).

Angels and airwaves,
The link below is to the Islands Chamber of Commerce and Visitors Bureau, you will find a lot of interesting information on attractions, transportation, dining etc.
And there are island maps too.
Acquaint yourself with the island before you go and you will know exactly what to see and do when you get there:

EDIT:
Nobody, but nobody could top Ahhchoooo's answer to this question!!

ohhh I love it there! How romantic! I took the high speed ferry from long beach to get there. it was a fun ride and doesn't take very long. I think the company was Catalina Express.
Once there, in the downtown area, we found a room at an inn that was located above the shops downtown. The room was obviously old and charming, very beachy and romantic. It was fun to stay in an older in just for the experience of quaint old Catalina.
the downtown area has a lot of cute shops and there are tours offered from here. They go to other parts of the island including some campgrounds. there are also a lot of activities that you can do including snorkeling, boat rides and a yellow submarine ride. The boat rides are fun, the best was the flying fish tour that leaves in the evening. We did see a lot of flying fish during this tour and one even nearly landed in the boat. I would recommend this.
Catalina is beautiful, take some time to just unwind and enjoy the quiet scenery and be aware that food here is VERY expensive in comparison to mainland Cali.
I hope you both have a wonderful time.

Take a great lunch with you and good walking shoes. It's a beautiful island that should be explored on foot, & on a bike.
