How would it benifit a cell to possess a sequence of DNA that couls be trabscribed and then edited intp several different mRNA molecules?

It allows for diversity of proteins. By having one stretch of DNA code for multiple different mRNAs (and therefore multiple different proteins), you can encode for hundreds or thousands of different molecules using only a (relatively) small piece of DNA. Best example is V(D)J recombination and isotype switching in making antibodies (proteins).
