If it was a straight-on battle, not involving Sauron, Gandalf, the dead warriors, or other magical elements, then the Orcs would have won simply by virtue of sheer numbers.

If the humans use cavalry, then the humans would win
if it's the same amount of combatants from each race, then the elves, as they have heighten senses.
if it's about all combatants available, then the orcs, just because they have so many troops.

I have to say the humans...they're the smartest! Orcs have the greatest numbers, but they could be outsmarted easily. (oh, gosh! I'm a total geek! pitting the humans against the orcs...my children will be proud)
