We are trying to decide from three different routes. I-5 to Bakersfield and then East to Vegas is one option. Another is through Bend to Burns and then south on a zig zag route through Winnemucca right through the middle of the state. Finally, a drive to Salt Lake and then I-15 to Vegas. Anybody have an idea of the best way??

Take I-84 E toward Boise then throught Salt Lake City
I-84 E becomes I-15 S You will be passing through Arizona then crossing into Nevada.

I do believe this is the shortest route.

I've done that route several times. For me I like taking I-84 to Twin Falls and then US93 south to Ely then a quick job along a new highway NV318 which shaves off a lot of miles and places you back onto US93 near Alamo, NV where US93 continues right into Vegas. This is by far the fastest and shortest route. The roads are in good condition but be sure to keep plenty of gas in your tank as towns are far apart.

I-84E to I- 15S, 18hrs,1185 miles.

Another route available south out of Portland which is shorter mileage wise[920 miles] but a little longer time wise. Going up and down the hills and driving on two lane state hwys.
